Charquicán de tapabarriga

Cuando hago charquicán por lo general me gusta ponerle acelga o espinaca. A este le puse acelga.
Ingredient

3 - 4 raciones

Cooking instructions
* Step 1
Medir y cortar los ingredienets
Cortar en bistecs la tapabarriga, después en tiritas y cortar en dados pequeños.
* Step 2
Calentar una sartén con el aceite de oliva y sofreír la cebolla con el ajo.
Agregar y dorar la carne.
Añadir el comino, pimentón de color, pimienta y orégano.
* Step 3
Incorporar la zanahoria, porotos verdes, pimiento morrón, choclo desgranado y las papas, mezclar bien.
Desglasar la sartén con las 2 tazas de caldo de carne.
Agregar las papas.
* Step 4
Tapar y dejar cocinar lentamente. Cuando están blandas agregar la salsa de tomate y mezclar. Ajustar cantidad de sal si necesita.
* Step 5
Aplastar un poquito las papas.
Agregar las acelgas y arvejas verdes. Cocinar por un par de minutos y ya está hecho el charquicán.
* Step 6
Servir el charquicán con un huevo frito, cebolla en escabeche, ají picante y cilantro picado.
* Step 7
Servir inmediatamente.
