Grandma's Risotto

Cooking instructions

* Step 1

Clean and cut asparagus tips (you can keep stalks for another recipe)

* Step 2

Heat broth in medium sauce pan

* Step 3

Melt 1/4 cup of butter in a large saucepan. When butter foams, add in diced onion. Sauté over medium heat until onions become translucent/pale yellow.

* Step 4

Add rice to large sauce pan and mix well. Coat all grains of rice with butter and onion mixture. Add white wine.

* Step 5

Cooke the rice, constantly stirring until wine has evaporated. Stir in 1-2 ladles of broth or enough to cover the rice.

* Step 6

Continue stirring over medium heat until broth has evaporated. Continue to add more broth each time the rice absorbs the broth.

* Step 7

After 10 minutes add asparagus tips and continue cooking rice by adding broth.

* Step 8

After another 10 mintes, the rice should be tender but firm to the bite.

* Step 9

Add whipping cream, 1/2 cup of Parmesan Cheese, and remaining butter.

* Step 10

Mix gently, salt to taste. Place in warm dish and serve immediately.
