Creamy pesto shrimp pasta
My dad used to make a very basic version of this, which I loved as a kid! This is my fresher take on this creamy, flavorful recipe!
Cooking instructions
* Step 1
Boil water in large pot. Once at a boil, add pasta and cook until done.
* Step 2
While getting water to a boil, heat olive oil in separate pot. Add zucchini and cook until almost done.
* Step 3
Add pesto and Alfredo sauce to zucchini. Stir until combined. Stir in shrimp and spinach. Let sauce cook until heated through and shrimp is pink.
* Step 4
Drain pasta once cooked. Add pasta back to large pot then add sauce. Mixed until combined.
* Step 5
Serve hot and add Parmesan, if desired, to top of pasta before serving.
