Apricot Couscous
This couscous is a light side to be served anywhere Mediterranean, Morrocan, Israeli, etc. is served. You can use either Israeli or Moroccan couscous
Cooking instructions
* Step 1
Bring the water and bouillon cube to a boil in a medium pot. Add the cous cous, cover, and cook on medium. Combine the apricot, almonds, onions, and herbs in a bowl.
* Step 2
When the couscous has absorbed the liquid. Turn the heat off and add the apricot mix. Add the lemon juice, and olive oil and toss.
