Chicken Nihari with homemade kulcha

#nveg #cookpadindia Nowadays chicken Nihari is in fashion originally these used to be prepared only with mutton meat ,trotters or shanks.but the soup is equally delicious in both the recipes.the name Nihari is derived from the work Nihar (morning) the moghals used to relish this Nihari early after our first prayer of the day that is “fajar “ .henceforth it’s easy to prepare as chicken cooks faster than mutton trotters.

Ingredient

Food ration :

Cooking time :

Around 30 minutes
600 grams

fresh chicken

1-2 glasses

water for cooking

3-4 tablespoons

ghee & oil mixed

2 tablespoons

Nihari masala

1 tablespoon

ginger garlic paste

1-1/2 teaspoon

salt

1/2 teaspoon

turmeric powder

1/2 teaspoon

Garam masala powder

Cooking instructions

* Step 1

Although kulcha preparation takes time so I always do it before hand just mix the dough & set aside to rise for 2 hours by the time the Nihari will be ready.homemade kulcha recipe link is pinned below:-

Firstly wash & clean chicken then in a pressure cooker add oil and add a bay leave,cloves,cardamoms sauté for few seconds then add the chopped onions sauté until golden brown & add chicken cook until it’s colour changes then add all spices including Nihari masala toss it well.finally add water accordingly and cook until chicken is tender.

Once the chicken is cooked now add the wheat flour slurry keep stirring to avoid lumps and adjust consistency of the soup and taste all spices at this point.add rest all ingredients lemon juice,coriander leaves,Garam masala powder etc and cook for 5 minutes more.finally the oil separates a layer and it’s ready to serve..!
