California Farm Tandoori Smoked Catfish Nuggets
Tandoori yoghurt marinaded catfish filet nuggets, smoked in the airfryer. Cat fish is a mild, firm, meaty, sweet water fish, excellent for smoking and marinading in milk or yoghurt.

1 hour marinade, 20 min grill and smoke
Cooking instructions
* Step 1
Dry the fresh catfish filet, cut in nuggets size chunks, brush with tandoori marinade, rest and hour on kitchen counter, covered with clean kitchen towel.
* Step 2
Clarify the butter. Melt stick of unsalted butter in measuring cup in micro wave, 1 minute, skim foam off the top, pour off the pure clarified butter, leave butter water in the cup on the bottom, so there will be no splatter. Put 2 Tbs on top of hardwood pellets in metal cup.
* Step 3
Heat hardwood chips with clarified butter in skillet, when smoking, put in metal measuring cup, put in air fryer, light with match, flame 3 minutes, blow flame out and place in airfryer. Gives an hour of smoke.
* Step 4
Lay catfish nuggets on smoke rack, slide into airfryer over smoker, grill 20 minutes at 400F degrees
* Step 5
Smoking in the air fryer works really well. There is some smoke in the kitchen, but an open window or kitchen fan clears it right out, the air fryer keeps most of the smoke recirculating inside the fryer. The tandoori fish nuggets are delicious, juicy and no fat.
