California Farm Buckwheat Chicken Liver Patties
I love buckwheat and meat combinations, see our traditional California farm recipes in here of spam, meatloaf and bratwurst. Buckwheat chicken liver breakfast patties are a Ukranian recipe. I soaked the livers in milk to remove the liver taste. I substituted eggs and butter with sesame seeds and lard. Food can be frozen longer if it does not contain dairy or egg products. Prep 1 hour, panfry patties 4 minutes each side
Cooking instructions
* Step 1
Soak livers in milk, 10 minutes.
* Step 2
On low heat, roast livers, green onions, sesame seed in mustard and molten lard. When livers are cooked white, about 20 minutes, turn up the heat and add 2 cups water and puree with handmixer. Add spoonfulls of buckwheat flour, stir till thick. Taste, add salt and pepper, mix, cool to stiffen.
* Step 3
Cool, ladle ice cream scoop full of mix onto oiled medium heat skillet, fry bottom, then press flat, flip, fry on both sides, serve.
* Step 4
Makes fifteen breakfast patties. Freeze individually in parchment paper in freezer bag.
