White Noodles

We grew up with many kinds of noodles as Mom used to run school cafe/canteen to support us kids when we were young. Some recipes are more tedious than the other to prepare, and this one SIMPLE, pale looking noodles, despite never made it to Mom's Menu List (because it's too simple and plain to sell 😅) is one of our favorite.

Cooking instructions

* Step 1

Note: Always have chicken seasoning powder or chicken bouillon in my kitchen. Use it for seasoning, replacing salt and broth. It comes in 1kg bag (or less). Next, we have dried chillies too. Small and wrinkly dried chillies are usually very hot, meanwhile, the big and less wrinkly are the less spicy type and this type is usually used for its vibrant colors. We always have both ready in the pantry.

For vegetarian version, we use mushroom or vegetable seasoning powder. Below are the types of seasoning we use for our vegetarian dish.

Prep all ingredients. Soak noodles in cold water to soften. This takes time. Avoid soaking in hot boiling water to prevent noodles turn too soft and mushy when cooked. Once soften, drain and discard water. Keep aside. Next, Heat 1/4 c of cooking oil (or as needed) in a wok. Add onions and sauté. Add white pepper powder.

When onions almost translucent, push it to the side of your wok or pan, crack eggs at the opposite side of sauteed onions. Leave it to slightly set then stir to scramble. When it's almost set, add dried chillies, chicken seasoning powder (or chicken bouillon) and Vermicelli. Keep stirring until seasonings are well-absorbed by the noodles. This takes time. Taste and adjust seasonings accordingly. Stir in greens last. Stir to mix greens until it's cooked.

Your noodle is ready when it's soft, pliable and it's well seasoned. Remove from the heat and serve warm. Linked are other variations of vermicelli & noodles.
