Ratatouille

Ratatouille is a great vegetable side for any meal. It is like a vegetable stew and you can vary the vegetables, but the basic vegetables are eggplant, zucchini, tomatoes, bell pepper and onion.

Cooking instructions

* Step 1

To a large pot add olive oil and heat on high. Add eggplant and brown the sides. You do not need to fully cook. Remove to a bowl.

* Step 2

If needed add more oil to pot. Add zucchini and brown on high heat. Remove to bowl with eggplant.

* Step 3

If needed add more oil to pot. Add in peppers and onions. Cook to soften. Add garlic and cook 30 seconds. Add wine and cook to reduce by 1/2.

* Step 4

Add in diced tomatoes with liquid, tomato paste, salt, pepper, and Italian seasoning. Add back in the eggplant and zucchini. If liquid level is too low add chicken stock so vegetables are just covered. Bring to a simmer and cook for 20 minutes with pot covered.

Serve in small bowls and enjoy!
