Mixed garden vegetable stew (τουρλού)🇬🇷

Mixed garden vegetable stew (τουρλού)🇬🇷

Very popular dish especially for those of us that grow our own veggies 🌶 🌽 🍅

Ingredient

Food ration :

6-8 people
4-5

small aborigines diced

3-4

zucchini diced

4-5

medium potatoes diced

1

onion chopped

3-4 cloves

garlic sliced

2-3

carrots diced

2

bell peppers cut in small pieces

1

hot banana pepper if you like the heat

1/2 cup

olive oil

to taste

Salt

to taste

Ground black pepper

1/2 tsp

oregano

1

bay leaf

2 tbs

tomato paste

3/4 litre

water

Cooking instructions

* Step 1

First wash dice and chop all the veggies

* Step 2

Now on a big pot add onion garlic oregano and bay leaf and sauté till transparent

Now add zucchini and keep sautéing than add the eggplant and keep sautéing

* Step 4

Now add all the rest of the veggies and sauté everything all together

* Step 5

Now add water and tomatoes paste and bring to a boil stirring occasionally

* Step 6

Now add salt and pepper to your taste and cook at medium heat for about 1 hour
