Wedding Italian Soup
The whole family loves this Italian wedding soup with tender meatballs, veggies and pasta in a rich, flavorful broth.

Cooking instructions
* Step 1
Meatballs
Add beef and pork to a large mixing bowl. add all the ingredients and mix till combined.
Make little balls, place on cookie sheet and bake for 10 minutes at 350F
The wont be cooked through.
* Step 2
Soup
While meatballs are browning, heat 1 Tbsp olive oil in a large pot over medium-high heat. Add carrots, onions and celery and saute until veggies have softened about 6 - 8 minutes, add garlic and saute 1 minute longer.
* Step 3
Boil pasta and set aside. Don't add into soup.I have in the past and they swell up.
* Step 4
Pour in chicken broth, season soup with salt and pepper to taste and bring mixture to a boil. Add in meatballs, reduce heat to light boil (about medium or medium-low).
Add spinach during the last minute of cooking.
* Step 5
Serve over pasta and sprinkle each serving with parmesan cheese.
