Paul's Thanksgiving Chopped Spinach
Started making this about 40 years ago, changed ingredients and both things, basically my recipe. Quantities of ingredients are as I make it. Tradition on Thanksgiving.

2-3 servings
Cooking time :
15 to 40 minutes
Cooking instructions
* Step 1
I cut off the crust and sometimes dry overnight first, then cut into croutons size with a serrated knife.
* Step 2
In a small skillet, melt 2 Tbsp+butter and add a crushed garlic clove.
* Step 3
After the galic has sweat, add the bread and toss until browned. Set aside.
* Step 4
Thaw and squeeze out excess moisture from the spinach then roughly chop.
* Step 5
Melt the rest of the butter and saute the spinach.
* Step 6
Add some cayenne, nutmeg and salt and pepper, all to taste.
* Step 7
When it tastes right, set aside until just before serving.
* Step 8
When ready to serve, reheat the spinach.
* Step 9
Then add some sour cream, how much is up to you.
* Step 10
Finish by stirring in the croutons.
