Vickys Toffee Candy Crackers - GF DF EF SF NF Vegan
This is a popular recipe that comes around my feed every Christmas. I've veganized it for Jack to enjoy
Ingredient
Cooking time :
25 minutes plus cooling time
Cooking instructions
* Step 1
Preheat the oven to gas 7 / 210C / 425F and line an 8 inch oven tray with parchment paper
* Step 2
Put a single layer of crackers on the bottom of the tray. The closer packed they are, the easier it is to spread the chocolate topping over but it's not that important
* Step 3
Add the sugar and safe spread into a small saucepan and melt together. Give it a quick stir to combine then bring to a rolling boil for 3 or 4 minutes, adding the vanilla when the mixture thickens
* Step 4
Pour the toffee over the crackers. It'll go under and between them - it doesn't matter. Put the tray in the oven for 5 minutes to thicken the toffee further
* Step 5
Take the tray out and shake the chocolate chips over. Put back in the oven for 2 or 3 minutes then spread the melted chocolate over the top with the back of a spoon
* Step 6
Let cool then set in the fridge to harden for a couple of hours
* Step 7
Once cooled, peel the parchment away from the bottom and snap into smaller pieces. They'll keep well in an airtight container for a few days
