Eclairs with Whipped Custard Filling

Eclairs with Whipped Custard Filling

For the custard filling I used powdered custard which I cooked according to package instructions to achieve a hard custard. Then I chilled it and later on whipped it into the whipping cream to create a bang on WHIPPED CUSTARD FILLING.

Cooking instructions

* Step 1

Bring water and butter to a roaring boil on medium heat. Take mixture off heat and quickly stir in the flour until fully absorbed

* Step 2

Take mixture back to the heat and stir for a minute until it comes together like a ball and does not stick to the sides of the pot. Chill mixture for 15minutes or until lukewarm

* Step 3

Meanwhile preheat oven to 200C and double line a cookie sheet with parchment paper. Set aside

* Step 4

Into the chilled mixture, beat in the eggs (one at a time) until thoroughly combined. You should now have a smooth pipeable paste

* Step 5

Transfer mixture into a piping bag fitted with a round or star tip. Pipe long strips onto the prepared pan, at least 2cm apart

Bake at 200C for 15minutes before reducing the heat to 180C. At this point it will have puffed up. Then bake for an additional 15-20minutes until lightly golden and dry. Cool completely on a rack

As the choux pastry cools, whip together the custard and cream until a little stiff. Using a pointy tip or skewer, stick a hole all the way through the length of the eclair to make way for the filling

Transfer custard cream into a piping bag fitted with a pointy tip and fill the eclairs by inserting the tip through the hole you made earlier. You will know you’ve filled an eclair with enough cream the moment it starts to slightly feel heavier. DO NOT OVERFILL or your eclairs will be soggy

* Step 9

Break chocolate into sizable pieces and microwave for 30th ones to soften it. Now gradually stir in the hot water to melt the chocolate to a desired consistency (not too runny but still able to slowly slide off the back of a spoon)

Dip tops of eclairs in melted chocolate

Garnish with gold leaf or sprinkles if desired. Allow to set and enjoy
