I Cannot Believe It Is Turkey Meatloaf ~ Easily Gluten Free

I originally saw Ellie Krieger make this on her show “Healthy Appetite with Ellie Krieger“. She called it "Mom's Turkey Meatloaf". I have been making this since my 16 year old was a toddler. I renamed it this name because it's true... it doesn't taste like a turkey meatloaf or as healthy as it is for you. I think I have changed it a bit from the original, too.

Cooking instructions

* Step 1

Preheat your oven to 350 degrees.

* Step 2

In a small bowl, stir the oats and milk together.

* Step 3

Thinly slice 1/4 of the onion and set it aside.

* Step 4

Finely chop the remaining onion.

* Step 5

In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire Sauce, ketchup, salt, and a few grinds of pepper. Mix just until well combined.

* Step 6

Transfer the mixture into a 9 by 13 inch baking dish. Shape into a loaf about 5 inches wide by 2 1/2 inches high.

* Step 7

Pour the tomato sauce evenly over the meatloaf.

* Step 8

Spread the sliced onions evenly over the top.

* Step 9

Bake for about 1 hour or until a meat thermometer registers 160 degrees.

* Step 10

Remove from oven and let rest for 10 to 15 minutes before slicing and serving.
