Pahadi Lasooni Gosht

#win #week3 Truly irresistible taste of this mutton comes from adding whole garlic when fried on high flame along with whole baby onions. Cook this in earthen pot on slow flame or in any pan without using a pressure cooker. When winter is at its peak, a bowl full of this curry along with tandoori roti or steamed rice is best comfort food to keep you warm for a while.

Cooking instructions

* Step 1

In a pan or pressure cooker heat up mustard oil, add bay leaves, garlic bulbs and whole baby onions, and fry till they get brown and crisp.

* Step 2

Add chopped ginger garlic and grated onion, fry until brown

* Step 3

Add ground garam masala, powdered coriander seeds. Stir well then add mutton pieces. On high flame let the mutton get coated with masalas.

Now add chopped and pureed tomatoes, chopped coriander on top of the mutton, lower the flame, cover and cook till the tomatoes get soft and mushy. Stir and continue to cook.

Mix well, add turmeric, and more salt, I used coarse sea salt, slightly crushed whole red chillies, pounded black pepper and a tbsp of pure ghee. Let it simmer without adding water for 10-15 minutes

Boil water, add little by little and continue cooking the mutton, if you are using a pressure cooker add boiling water as per the desired consistency

Heat up ghee, add red chilli powder and por over the mutton just before serving. Goes well with kadak roti or steamed rice.
