苦瓜炒蛋 STIR FRY BITTER GOURD WITH EGGS

Cooking instructions
* Step 1
Cut bitter gourd to half (length-wise) and use a spoon to scoop out the seeds. Slice bitter gourd thinly.
* Step 2
Wash the bitter gourd, and soak in water with salt for at least 15 minutes.. It somewhat helps to reduce the bitterness..
* Step 3
After 15 minutes drained the bitter gourd, try to sqeeuze out as much water from bitter gourd
* Step 4
Beat 4 eggs in a bowl, add in a teaspoon of soy sauce
* Step 5
Heat oil in pan, stir fry some minced garlic
* Step 6
Add bitter gourd slices and stir fry over high heat.. Add in fermented black bean sauce (if you prefer it to be saltier you may add 0.5 tablespoon to 1 tablespoon MORE) the fermanted Black bean sauce I used in below picture
* Step 7
Pour the beaten egg slowly over the bitter gourd slices. Stir fry until the egg is cooked and dry.
