honestly, this is amazing. the flavor is heavenly, but I'm a big sirloin fan

Cooking instructions

* Step 1

preheat oven to 450°

* Step 2

roast should be at room temperature. rinse and dry roast.

* Step 3

make slits on top of roast, insert garlic slivers.

* Step 4

mix herbs (1 1/2 t salt, 1/2 t pepper, thyme, oregano, savory) and 3 tablespoons oil in seperate bowl. brush all over roast.

* Step 5

place roast in roasting pan that has been sprayed. make sure roast is fat side up.

* Step 6

roast for 15 minutes.

* Step 7

toss veggies with oil, salt and pepper.

* Step 8

spray cookie sheet and put veggies on it.

* Step 9

reduce oven heat to 350° and put veggies in.

* Step 10

roast meat 50-60 minutes and veggies the same time, mixing every 15 minutes.

* Step 11

place roast on cutting board and let rest 20 minutes.

* Step 12

heat pan over medium heat, add broth and wine. simmer and reduce heat to low. add butter, salt and pepper.

* Step 13

if veggies are done, take them out.

* Step 14

cut roast, serve with veggies and gravy.
