Cooking instructions

* Step 1

Pluck leaves at first and wash them thoroughly. Drain well. Spread them on a tray or a plastic sheet to dry up.

* Step 2

Meanwhile heat oil and add hing, mustard seeds, curry leaves and both the lentils. Let them fry a little until the colour changes and then add the chopped onions and the powdered spices. Also add salt. Next add the leaves.

* Step 3

Mix well and cook on a low heat with a lid on. It gets done very quickly. There is no need to add water. Just give a stir every two minutes. It gets done in about 15 minutes. The raw smell fades away and a nice aroma emanates in the kitchen.

Adjust salt accordingly. Serve it piping hot right away. Enjoy!
