These beautiful looking Rice Paper Rolls are a great option on any day. A best snack, a perfect starter and even a healthy Brunch idea. With Rice Vermicelli, Prawns and Veggies, it's a winner all the way.
No matter when you wish to eat these, they are just as perfect. The filling can be any and many with a wide range of options. I chose this filling as it was handy as well as at my disposal.
Non-Veg version with Shrimps or Prawns is as good as the all Vegetarian version. They are so delicious and delightful.
With Peanut Sauce, it's a delicious treat all the way. You will just love these. Try these for a filling meal that's healthy and nutritious. And quick as well. I have used Thai Peanut Sauce for serving these Rolls. I didn't make Vietnamese Peanut Dipping Sauce for this. That's it. Let's get started with the recipe right away.

Cooking instructions
* Step 1
Take the sheets out from the pack. Dunk each of them in clean drinking water. There is no need of soaking them. Just immerse each for a second or two. See to it that it's done on both the sides. This is basically done to soften the sheets. You can use two sheets too if desired. I took just one for each roll.
* Step 2
Boil rice vermicelli until done with little salt. It takes just 8-10 minutes. Likewise, shallow fry prawns with some selected spices. That's it. Set it aside until use.
* Step 3
Take the rice paper out of the water and now start adding the filling one by one. Place a cabbage leaf or lettuce at first. Top it up with the mixed sprouts. Top with julienned capsicum, cucumbers and finally the coriander leaves. And top up with shallow fried prawns.
* Step 4
Fold it from the sides now. Cover it nicely overlapping them. Now roll just as we do for spring roll sheets. That's it. As easy as that.
* Step 5
But these are raw. These paper rolls are uncooked. They don't require cooking. Healthy and wholesome. A perfect choice for snack, brunch or even a quick fix dinner. Enjoy!
