Vegetarian Pasta Salad

Need a side dish for a summer BBQ or picnic? Bring this pretty fresh pasta salad with you!

Ingredient

Rotini

1/4 cup

olive oil

1/2 tsp

salt

1/2 tsp

pepper

3 tbsp

lemon juice

Cooking instructions

* Step 1

Cook pasta in slightly salted boiling water. When pasta is fully cooked, drain the pasta water and run pasta under cold water. Put cooked pasta in icy cold water for 5 minutes, then drain the water.

* Step 2

Cut the cherry tomatoes in half. Chop the red onion. Cut the cucumber in half, remove the seeds, then cut them in half moons.

* Step 3

Cut the Mozzarella cheese balls in half. Chop the fresh basil leaves.

* Step 4

Mix all the dressing ingredients in a small bowl.

Lay all ingredients on cold pasta, then pour the dressing on top. Mix well.

Delicious Vegetarian Pasta Salad ready to serve! (Optional) Refrigerate the pasta salad for 30 minutes before serving.
