Chicken Fried Black Rice

This can be made in a jiffy if you keep handy some freshly cooked Black Rice. Yes, you have heard right. This fried Rice is made with Black Rice, Chicken and lots of Veggies. And the Vegetables can be any and many according to your choice. Plus this one has Chicken cubes too. In all probability, this is a perfect choice for the party. And the best part is that you can be rest assured about the taste and the texture. Just make sure of some al dente cooked Rice and that's it. You should not make it mushy or too soft. That's the only thing to be taken care of.

Cooking instructions

* Step 1

Wash the black rice thoroughly three to four times and then soak in enough water for about 60 minutes preferably. Keep a vessel with water as required for cooking the rice. Let it come to a rolling boil on a high heat. Add salt according to taste.

* Step 2

Water should always be added proportionally. For 1 glass of rice that has been drained and soaked, 2 glasses of water will be required. (This is the correct proportion)

Cook it on a high flame for the first 5 minutes. Then lower the flame and let it cook for about 20-25 minutes more. The rice will cook for approximately 30-35 minutes. If you soak it overnight, then the cooking time would be considerably reduced.

* Step 4

Meanwhile, in a cooking pot, add butter and oil. To this, add in garlic mince and the spring onion greens. You can also add other ingredients one by one and stir fry the chicken first for a few minutes followed by the vegetables. Saute until crisp and done. Oil should be added generously. It would give both flavour and texture.

After the rice is done, transfer the chicken and vegetables mix to the pot and toss well. Allow this to stand for another 5 minutes before serving. This awesome Rice can be served with any Indian dish with chicken manchurian or any gravy or a Chinese side dish as well. Yum! Enjoy!
