Rajasthani Mirchi Bada

#cookpadindia #easy #mirchivada This one is a famous savoury snack from the State of Rajasthan in which the Bajji Chilli or the Chillies used for Mirchi Bada (Vada) are given a lengthwise slit from the centre and then stuffed with Potato and a few spices infused filling and then coating these in a batter of Gram flour or Besan which are in turn deep fried to get that perfect crunchy and flavourful Mirchi Pakoras or Bada. These make for a yummy snack for Tea-time or Shaam ki Chai and can be relished alongside some freshly made Masala Chai.

Cooking instructions

* Step 1

Make a thick batter using all the ingredients listed under it. The batter should be thick but without lumps. Use water as required. Keep aside for 30 minutes at the least.

* Step 2

The standing time given to the batter makes it fluffy and porous. Wash and slit the chillies from the center. Remove the white stalk and the seeds from them. Prepare the stuffing by mixing all the ingredients mentioned under it's heading. Fill this stuffing in each one of the mirchi carefully.

* Step 3

Meanwhile, keep a kadhai with enough oil for frying them. Dip each in the batter and coat all the sides evenly with it. Drop carefully in hot oil and keep the heat on medium to high. Fry in batches of 2-3.

* Step 4

Serve them piping hot with any chutney of your choice. I served them with our very own good old kissan tomato ketchup. Enjoy!
