With roasted and pounded masalas added, it becomes a lovely looking nutritious Curry apt for mealtimes on any day.

* Step 1
In a pan, heat oil and add the ginger-garlic green chilli paste Saute for a minute and add the onions. Saute until translucent. Next is to add the coconut, peanut and sesame paste directly. Mix well. Saute until nicely done and the raw smell almost gone. Now add the brinjal pieces and half of the chopped coriander leaves and a cup of water too along with the powdered spices as mentioned.
* Step 2
Cover and cook on a low heat for the next 20-25 minutes. Do not add too much of water. Add a little to facilitate easy cooking of them. Also add in more of chopped coriander leaves just about 5 minutes before taking it off the gas. After done, check for salt. That's it.
* Step 3
It's all ready to be served with your favourites. Rice and rotis both go well with this. Relish this awesome dish well garnished with chopped coriander leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
