Kala Chana Mixed Vegetable Curry

#ws3 #cookpadindia This is yet another great Curry that can be enjoyed at meals. Easily done with a bare minimum of essentials, this is absolutely amazing. With cartload of important Minerals and Vitamins. Kala Chana is one such versatile Pulses that we Indians enjoy in various ways. This is infact the cheapest source of Iron as well. And prevents Anaemia thereby boosting our energy levels. It is beneficial in growing Children as it helps in the formation of Haemoglobin that is essential for a good Hg count in the body.

Cooking instructions

* Step 1

Soak Black Chickpeas or Kala Chana overnight in clean drinking water. Don't discard the water when you boil it the next day. Use the same water for boiling to retain the important Minerals and Vitamins. It's highly recommended by me. Never discard the water in which the Pulses and the Lentils are soaked for any Curry or Gravy.

* Step 2

The extra water can be used for kneading the Chapati dough. After they are boiled and the water fully absorbed, keep the Chana aside until use.

* Step 3

In a kadai, heat Oil. Add Mustard Seeds at first followed by the Asafoetida or Hing. Let them crackle a bit and then add chopped Onions, Tomatoes, Capsicums, Carrots, Cucumbers etc. Saute all that for about 10-12 minutes or until the raw smell fades away. Also stir in the spices too. Add chopped Green Chillies and a small bunch of chopped Coriander Leaves without fail.

* Step 4

And then finally, add the boiled Kala Chana. Mix well and adjust Salt at this stage. Garnish with a little Garam Masala. And that's it. Yummy dish is ready to be served. Enjoy!
