Easy Egg Fried Rice

This is the most loved comfort food according to me. When you cannot think of what to cook on any day, this is the saviour. It's not only easy but also made with just a few ingredients. Eggs are always there in every Kitchen. So is the case with Rice, either made fresh or even leftovers can also be used in making this lovely looking Rice dish. I have used Capsicum but it's not at all necessary. You can very well proceed without it also. Spices can be adjusted according to one's choice and preference.

Cooking instructions
* Step 1
Heat Oil in a kadai. Saute Onions and Capsicum both on a low heat but do not saute them for a long time. The raw smell must fade away. Now stir in the rest of the spices mentioned. Mix well and break Eggs into it one by one.
* Step 2
Keep mixing as you add them so that they get cooked well and gets the perfect texture. Now cover and cook for 5 minutes. After done add in the cooked Rice. Mix well. Adjust Salt and pepper at this stage. Garnish with chopped Coriander Leaves. Mix well again and it's all ready to be devoured with your loved ones and friends.
