Jhatpat Pavbhaji in Cooker
A quick version of the dish relished by one and all.

Cooking instructions
* Step 1
Wash, peel and chop onions, garlic, chillies and ginger finely in a chopper. Chop the tomatoes finely. Dice all other vegetables. Blanch the green peas.
* Step 2
In a pressure cooker, take 1tsp oil and 2 tbsp butter. When it melts add in onions. When well cooked add in chopped tomatoes. Cook well.
* Step 3
Add in salt, haldi, Kashmiri chilli powder and Pavbhaji masala. Stir and cook for 1 minute. Add in the diced vegetables.
* Step 4
Mix and add 250 -300 ml water.
* Step 5
Close lid and cook to 4 whistles and the 1 whistle on slow gas. Allow the pressure to subside. Open lid and mash the bhaji. Add in blanched peas with the hot water. Mix well. Adjust for salt as per taste.
* Step 6
Add in tadka of butter, oil, kasuri methi and pav bhaji masala.
* Step 7
Lastly, add coriander and cook for 2-3 minutes. Pav bhaji is ready.
* Step 8
Toss pav in a mixture of oil, butter, coriander and chilli powder.
* Step 9
Serve hot with chopped onions and lemon wedges.
