Turiya Patra nu Shaak

An all time favorite summer special sabzi of the desi Gujrati cuisine. This sabzi is prepared green or red. I have prepared it green as served in marriage lunch menu. This is a delicious way to consume the nutrition and water-packedsummer vegetable, Turiya(Ridge gourd) .

Ingredient

jira

1/4 tsp

hing

1/4 tsp

haldi

1 tbsp

sugar

1 tsp

salt

1/4 tsp

garam masala

1/2-3/4 cup

chopped coriander

Cooking instructions

* Step 1

Make patras as usual. Chop the turiyas(ridge gourd)

* Step 2

Coarsely pound dhania, til and variyali. Keep aside. For tempering,take oil, add jira.

* Step 3

Add in cloves-cinnamon, red chilli and curry leaves. Add in hing and the pounded masala and ginger-chilli paste. Mix in chopped turiyas. Add in haldi and dhanajira.

Add salt and mix well.

Add in 1/2 cup water and cover and cook for 5-7 minutes. Stir in between.

Add in coarse groundnut powder. Add in sugar and mix. Add in 1 glass water and bring to a boil. Add fresh grated coconut.Slice the patras

Add patras into the sabzi. Lastly, add 1/4 tsp garam masala

* Step 8

Add in fresh green coriander. Mix light handedly, else patras will crumble. Cook for 3-4 minutes and swich off gas. Add lemon juice and mix.

* Step 9

Garnish with grated coconut and coriander and serve. Enjoy with puri or roti. Relish with a smile with family and friends. Happy Cooking!! 😊
