Cooking instructions

Keep all ingredients ready.

Wash and soak the rice for 3-4 hours. Once the rice grain is brittle and breaks easily, strain the rice and allow the water to drain off the rice for about 30 minutes.

Take the drained rice in a mixer jar. Add in milk about 200 ml first. Add in about 200 ml of milk.

Add in sugar, salt and olive oil.

Add in the instant yeast. Cover lid of mixer jar and grind it to a paste.

Line a loaf tin with baking paper and grease it with olive oil using a brush and keep it ready.

Grind the rice etc. until you get a smooth paste. Add in the remaining milk as required to set the consistency as shown in the video. (Note: As ground rice is used, the consistency should be like an idly batter.)

Points to remember: This is a no -knead bread. The crust of this bread will be crispy. Moreover, this bread will sink a bit, while baking as it is gluten-free. But it's very tasty. The batter gets warm in the grinding process, so no need to warm the milk.

Now pour the batter into the loaf tin. Tap the tin to level the batter and to minimize the air pockets.Garnish with black til and chilli flakes.

Place the tin in the oven at OFF MODE. Allow the batter to rise for 30-45minutes, until double in volume.

Now it's time for baking. No need to preheat the oven for this bread. Start the oven at 160-170°C.

Bake for 20-25 minutes or until the knife, when inseted, comes out clean. The crust will get crispy.

Take out the bread on a wire rack. Unmould it carefully with the help of the baking paper.

Apply butter on the bread to keep the crust glossyCover the bread with a damp, clean, white cloth for a while.

Cool the bread completely and cut into slices. And Lo! An easy Gluten-free, Guilt-free and Knead-free Ground Rice Bread is ready.
