Spiny gourd(kantola) Sabzi (with an unique topping)

A recipe I learnt from my Mother- in- law.
Ingredient

Cooking instructions
* Step 1
Wash well and chop the spiny gourd into rings. Remove the ripened red seeds, if any.
* Step 2
In oil, add the tempering ingredients. Add in the chopped kantola and saute for 2 minutes, to coat each piece of kantola with the oil.
* Step 3
Add salt and mix. Cover lid and cook on medium slow gas for 3 minutes.
* Step 4
Meanwhile prepare the masala. Ready all the masala ingredients and crush coarsely in mixer jar, on pulse mode.
* Step 5
Make a coarse masala powder. (This powder can be stored for a month, in fridge and can be used in any bharelu shaak). Keep aside,.
* Step 6
Now when kantolas are almost 80% cooked, add on 1 chopped tomato. Mix. Cover and cook for 2-3 minutes.
* Step 7
Open lid, mix and add in the prepared coarse masala. Also add 1 tsp of sev.
* Step 8
Add 3-4 tbsp water, cover and cook for 2-3 minutes. Open lid and mix well.
* Step 9
A healthy, tasty, nutritious, seasonal SPINY GOURD SABZI is ready. Add some coriander and mix.
* Step 10
Serve hot topped with SPECIAL TOPPING-SEV.
Garnish with some coriander.
* Step 11
Serve the yummy sabzi with roti, dal and rice.
