Chicken Lemon Coriander Soup

A perfect soup for winter season with freshness of coriander and carrots. This is a delicious chicken soup made from chicken stock and lots of fresh coriander and lemon juice. I have tasted this soup in many restaurants and this my fusion version.

Cooking instructions
* Step 1
Add the chicken in a pot and fill the pot with water up to a level where it covers the chicken. Add 1 tsp of salt, 1/2inch ginger and a few coriander leaves. Let this boil for 15 minutes. Take the chicken out of the pot and once it cools, start shredding the chicken using fork.
* Step 2
Meanwhile, add 2 tbsp butter in a pan and add chopped garlic and ginger to it and slit green chilli. Once the ginger and garlic cook nicely, add in 1 cup of chicken stock and about 2 cups of water along with the shredded chicken, diced carrots and bring this to a boil. Season it with salt and pepper. Add corn flour slurry and coriander leaves along with 2 tbsp lemon juice.
* Step 3
Slowly add egg mixture to soup, stirring gently and you get the desired texture and looks. Ladle soup into serving bowls, add a dollop of butter and enjoy hot.
