Airfryer Spaghetti squash and fried egg quick lunch
my colleagues were cooking spaghetti squash in the air fryer and had some leftovers so I decided to make a quick and easy lunch. the combination of sweet squash and the runny salty egg was a match made in heaven.

18-20 minutes
Cooking instructions
* Step 1
Cut your spaghetti squash in half lengthwise and de-seed. Place in an air fryer at 200c for 18 minutes. The squash will be sweet and a little Al dente. if you don't have an air fryer roast it in the oven for 30-40 minutes
* Step 2
Spaghetti Squash once baked will spread into fine spaghetti-like strands - which is so much fun, especially for kids. heat a knob of butter in a frying pan and place your cooked squash strands into the butter and lightly fry until golden and completely coated in the butter. Season to taste with salt and pepper.
* Step 3
Place the cooked squash in a place and fry an egg in the same pan. I like mine to be crispy on the bottom and runny on top. Place it on top of your spaghetti squash and serve with toasted bread on the side. have it without bread for a gluten-free breakfast or lunch.
