Crispy Gram Flour Arbi

Arbi is a starchy root vegetable that has a brown-coloured fibrous exterior and a white, slightly slimy flesh inside. For preparing a very crispy arbi fry, I have added a tablespoon of gram flour (besan) along. This is optional but makes for a fantastic crispy arbi fry.

Cooking instructions
* Step 1
Wash arbi in running water. Transfer it to a pressure cooker. Add water and Cook till 1 whistle. Switch off the flame. Let pressure release automatically. Then open the lid and remove its skin.
* Step 2
Chop boiled arbi in small round pieces.
* Step 3
Heat. Cooking oil in a wok. Add carrom seeds and saute for 1 minute.
* Step 4
Add gram flour and saute till pinkish on low flame. It may take 3 minutes.
* Step 5
Now add chopped arbi and coat well in gram flour mixture by tossing
* Step 6
Now add salt, red chilli powder, coriander seeds powder and garam masala and mix. Cook for 2 minutes till crispy golden brown.
* Step 7
Add chopped coriander leaves and mix.
* Step 8
Serve hot with chapati or serve as condiments with dal rice.
