#Jaggery Rice is a simple and healthy rice variety made with rice, jaggery syrup, coconut and nuts. This jaggery rice is a winter special recipe made in north India which can be served as a snack/dessert or even as a meal for toddlers and kids.

Cooking instructions
* Step 1
Chop jaggery. Wash peel and grate carrots and coconut. Make available all ingredients.
* Step 2
Wash and Soak rice in water for 10 minutes. Then strain water and transfer it in a pressure cooker. Add water and cook till first whistle. Switch off the flame. Let pressure releases automatically. Open the lid and transfer rice in a bowl.
* Step 3
Heat ghee in a wok. Add grated carrots and coconut. Cook on low flame till carrots are soft and cooked.
* Step 4
Add jaggery and cook on low flame till jaggery melts. Now add rice, raisins and all dry fruits. Cook on low flame till jaggery is coated fully on rice. Add fresh malai and cook till oil leaves the karahi. Switch off the flame.
* Step 5
Serve hot garnished with dry fruits.
