#Pittor Ki Sabzi is a traditional Rajasthani curry of shallow fried chickpea dumplings in spicy yogurt gravy.

Cooking instructions
* Step 1
Mix all the ingredients for making dumplings in a mixing bowl. Add 1 bowl of water and whisk it thoroughly. Then add another bowl of water and mix.
* Step 2
Heat oil in a wok. Add cumin seeds and when cumin seeds splutter put finely chopped onions and fry till translucent. Add besan batter and keep on stirring on medium flame till it turns thick as a lump.
* Step 3
Transfer it to a greased plate and spread evenly and let it cool.
* Step 4
Now place a plate over it and turn it upside down and tap. It will come on another plate. Now cut pieces.
* Step 5
Heat oil in a griddle. Add cumin seeds and when cumin seeds splutter put dumplings and shallow fry till crispy golden from both sides.
* Step 6
Wash, peel, and chop ginger, garlic green chilli, and onion. Heat 1 tb spoon oil in a wok and add all khade masale with cumin seeds and coriander seeds and roast for 1 minute. Now add onion, tomato, ginger, garlic, and green chilli and saute for 2-3 minutes till the aroma comes. Switch off the flame. Let it cool.
* Step 7
Transfer it to a grinder and grind to a fine paste.
* Step 8
Again heat oil in a wok. Add cumin seeds and when cumin seeds splutter put this masala and sauté till oil leaves the karahi. Add 2 tb spoon curd and mix and saute for 1 minute.
* Step 9
Now add water and let it boil. Slow the flame and simmer again till it gets thick. Add dumplings and mix and immediately switch off the flame. Pitter Curry is ready.
* Step 10
Serve hot with chapatti or rice or parantha.
