Chicken and Tortilla Soup
Cooking instructions
* Step 1
Heat Olive Oil in a large soup pot over medium heat. Add Onion, Garlic and Jalapeño and cook until onion is softened.
* Step 2
Add in ground Cumin, Chilli and Paprika and cook for 3 minutes. Add Chicken and combine well with spices.
* Step 3
Add canned Tomatoes, Beans, Corn, Stock and hot Water. Bring to boil, reduce heat, cover and simmer for 20 minutes.
* Step 4
Season with Salt, Pepper and Lime juice to taste.
* Step 5
Spoon soup into bowls and top with Tortilla chips, and sliced Avocado or Guacamole.
