Porterhouse steak braai

Cooking instructions
* Step 1
Prepare Cob with 7 charcoal briquettes.
* Step 2
Prepare steaks by aligning the fat sides and skewer together. Oil the fat and season with Braai Spice.
* Step 3
Once briquettes are white, place meat fat side down on grill over the coals. This will smoke a lot.
Grill till fat is rendered and crispy.
* Step 4
Remove the grill and insert the slotted plate which will assist with even cooking of the meat.
Remove skewers and place meat flat on the grill.
* Step 5
Season the meat and turn over, season the other side.
Place grill back into Cobb and place the lid on.
* Step 6
Cooking time will depend upon your preference. For rare, internal temperature should be 49°C. Upto 60°C for medium and 68°C for well done.
* Step 7
Remove meat from grill and rest for 5 minutes. Don't touch the meat during resting.
