150 g

pancetta

Cooking instructions

* Step 1

Cook onions gently in olive oil. After a min or so, add pancetta and aubergine together. The fat from the pancetta helps to cook the aubergine. Cook on medium for about 4-5 minutes. Add tin of tomatoes, a small glass of water and turn down the heat. Simmer for about 20 - 25 minutes while you bring pot of salted water to the boil

* Step 2

Cook pasta according to instructions. Drain al dente, add to sauce and mix well

Serve with Pecorino cheese 😊
