Risotto alla Monzese
Everyone knows risotto Milanese made with saffron. Very close to Milan is a lovely town called Monza. And here is their version. As I've explained before, regional variations of dishes are plenty here. This is made with a local sausage called lunganega. It's really yummy! #Italian #mycookbook #risotto #dinner #mainmeal
Cooking instructions
* Step 1
Fry onions in olive oil, after a min add the chopped sausages. Cook until sausages brown. Add rice and cook for another min or so.
* Step 2
Add wine and let it evaporate. Then add about 3/4 of the stock, saffron and salt. Stir and cook on low for about 20 mins. Add more stock if needed.
* Step 3
Towards end of cooking time, add butter and Parmesan. Stir until creamy. Serve and enjoy 😁
