Gateau di patate napoletana
Neapolitan potato bake. This is not just tasty but really tasty. It's made with a particular type of salami from Naples but you could use any good quality Italian salami adding even more pepper than I have done! Buffalo mozzarella is great with this but normal works too. This is a typical Sunday lunch served with a starter of maybe prosciutto, vegetables in oil and bread sticks. Cooking instructions
* Step 1
Peel and chop potatoes. Boil in salted water until soft. Mash with a knob of butter. Leave to cool in a big bowl. Prepare rest of ingredients. Drain mozzarella, and chop all ingredients
* Step 2
Preheat oven to 180. Add everything into the mash adding eggs as last. Make sure you add a good amount of black pepper. Mix very well
* Step 3
Grease a baking tray with butter. Sprinkle the tray with breadcrumbs. Add the potato mixture. Spread evenly. Top with more breadcrumbs and a few knobs of butter. Bake for about 35-40 minutes. Leave to rest for 15 minutes before serving
* Step 4
Enjoy with a lovely Italian starter and a glass of red wine
