Colourful couscous salad with rainbow tomatoes lime & coriander
Lovely salad. Very refreshing on a hot summer day. The sweet tomatoes mixed with all the other ingredients are so yummy! #eattherainbow #salad #couscous
Cooking instructions
* Step 1
Put couscous in a bowl. Add hot stock. Mix and cover with cling film. Leave for 6-7 mins
* Step 2
Fluff up with a fork. Add olive oil, enough to make it move around easily. Wash and dry the seafood
* Step 4
Add tomatoes and mix. Add chilli if using, zest and lime juice. Check for salt
* Step 5
Mix it all up well. Cover and leave in fridge for an hour or more to let the flavours blend :)
