Tomato, Chilli & Spinach Soup

Tomato, Chilli & Spinach Soup

Cooking instructions

* Step 1

Roughly chop the Onion and Chilli (Remove some or all of the seeds depending on how hot you like your food. I removed half of the seeds and it it perfect for my taste). Add to pan with butter on medium heat until softened.

If you have a soup maker:

* Step 3

If you don't have a soup maker: Add these ingredients to the onion and chilli in the pan. Simmer for 20 minutes. Whizz with a hand Blender until smooth.

* Step 4

Now add 5ml of Maple Syrup and 100g of chopped Spinach. You may wish to add extra salt according to personal preference. Stir, cover and allow the Spinach to wilt.

* Step 5

Serve with a wholesome bread or use as a pasta sauce.
