* Step 1

Peel and cut your potatoes into cube shape and cook for 15 mins. Drain in a colander

Cut your bell peppers.

In a pan, add oil then add onions and pepper and stir. Add carrots and seasoning and mix.

Add in your potatoes and mix, then spread evenly on the pan.

Whisk your egg and add little salt. Then pour over mixture.

Arrange bell peppers on top and cover with a lid and allow to cook for 10 mins on low heat.
