Saoji Egg Masala Curry Nagpuri style

Cooking instructions

* Step 1

Boil the eggs for 12 mins. Set aside. Peel and set aside

* Step 2

For Saoji Masala - In a wok individually roast all masalas and grated coconut mentioned under Saoji Masala and then add to a blender. Coarsely blend and don’t add water. Set aside

* Step 3

In a wok heat oil and add whole garam masala and bay leaf and stir for 1 min. Add chopped onions and little salt so that when cooked to brown it will be a little faster.

* Step 4

Add tomato purée and stir well. Add turmeric powder, Kashmiri red chili powder, red chili powder, garam masala powder, and stir for 5 mins.

* Step 5

Add eggs and mix well to cover the masala over the eggs. Add Saoji Masala and mix very well.

* Step 6

Add hot water according to your desired consistency. I added 1 cup. Add salt and cook for 6-7 mins.

* Step 7

Add chopped coriander leaves and stir once. Set aside

* Step 8

Plate and garnish with chopped coriander leaves and enjoy
