Coconut Chicken Pilaf

#ICF Coconut Chicken Pilaf is an ideal one-pot comfort food meal. Having all the taste of spicy, sweetness from the coconut in it. A famous cuisine from South India which is my favorite comfort food

Ingredient

Preparation time-15 mins, Cooking time-20 mins

4-5 sprigs

curry leaves

as per taste

Cooking instructions

* Step 1

Wash the boneless chicken and cut it into 1” cubes. Set aside. Slice the onions and chop the green chilies. Soak rice

* Step 2

In a wok heat olive oil, add the whole garam masala of cinnamon stick, cloves, green cardamom, whole peppercorns, star anise. Stir for few seconds and add sliced onions and cashew nuts. Cook until onions are slightly brown

* Step 3

Add chicken and chopped green chilies and curry leaves. Cook for 2-3 mins.

* Step 4

Add soaked rice, salt, coconut water, stock or water, and stir once, cover, and cook until water is absorbed.

* Step 5

Once done, set it aside and keep it covered for 5 mins.

* Step 6

Plate with salad and enjoy a comfort meal.
