Shaoji Mutton

#special Shaoji style of mutton cooking in Nagpur region of Maharashtra is very unique. A community called Shaoji have their distinctive style of handicrafts and cooking too.

Ingredient

Cooking instructions

* Step 1

Make a paste of ginger-garlic-coriander leaves and set aside. Adding coriander leaves will give a cut colour to the mutton.

* Step 2

Marinate the mutton with 1 Tbsp mustard oil, 2 Tbsp red chilli powder, 1/2 tsp turmeric powder, 1 Tbsp coriander powder and salt. Set aside for 15 mins

* Step 3

In a wok heat 4 Tbsp oil, add rice and fry till golden in colour. Add chopped coconuts and fry till golden in colour. Add whole garam masala, star anise, whole black cardamom, caraway seeds, Chana Dal, whole red chilies, bay leaf, 1/4 tsp Nagpur Black Masala and fry on low flame for 15 mins. Add poppy seeds and stir once. Set aside to cool. Add to a blender and make a paste by adding water slowly. Set aside

* Step 4

In the same wok heat 2 Tbsp oil and add ginger-garlic-coriander leaves paste and cook till oil surfaces on low flame. Add marinated mutton and cook for 5 mins. Add Saoji Masala paste and cook for 20 mins on low flame.

* Step 5

At this time take a steel plate and add 1/2 cup water and cover as a lid on the wok. On low flame let the water evaporate. This process will help to cook the mutton and give a dark colour.

* Step 6

Once the water evaporates, set aside the steel plate and give the mutton a stir. Add 1 ltr water and cover and cook on low flame for 45 mins.

* Step 7

If you want to use a pressure cooker to cook fast, you can do so but the taste would be very different from a Saoji one.

* Step 8

Once the mutton is succulent, set aside and enjoy. Garnish with coriander leaves
