This recipe has a unique blend of eggplant and baby onions with a zing giving this a different taste. Best enjoyed with Roti or Paratha

Cooking instructions
* Step 1
Wash the baigans and keeping the head intact make slits. Wash the onions and set aside.
* Step 2
With little water make a paste of powders of coriander, turmeric, aamchur, red chilli, turmeric and salt. Set aside.
* Step 3
Make a purée of tomatoes.
* Step 4
In a wok heat oil and add the baigans. Deep fry them. Set aside. Cool them and insert the paste of coriander, red chilli, aamchur, turmeric and salt. Set aside.
* Step 5
In the same wok add oil and add the small onions, stir. Sprinkle some water and cook covered for 8 mins. Add the tomato purée, coriander powder, green chillies, turmeric powder and salt. Stir well so that everything is coated well.
* Step 6
Add the baigans and stir well. Cover and cook for 5 mins.
* Step 7
Plate and enjoy with Roti or Paratha.
