Ek dal aur sabji aise bhi

At times, not only kids but also adults get bored of eating same dal, roti and vegetables everyday. So we as homechefs don't fail to try our different ways to keep our family happy with good food. This time I thought of giving a twist to my same jhat pat dal and veggies with little more colours and making it attractive enough for the family.

Cooking instructions

* Step 1

For soup Wash dal nicely, then put it in pressure cooker with at least 5 cups of water(same cup which was used for dal quantity). Add salt amd turmeric powder. Pressure cook with one whistle.

* Step 2

Meanwhile let's prep our veggies for buns. In a wok, add oil, crushed garlic, chopped ginger, onions and saute till you get the aroma. Make sure not to burn it. Keep the flame to medium.

Add mushrooms (please see notes at the end). Saute and cook covered till soft. Add salt, turmeric powder, red chilli powder, coriander powder and garam masala. Mix together.

Put kasuri methi, ketchup and fresh coriander. Mix and keep aside.

Cut the buns in half and scoop the center, making sure there is no hole in the base of the bun. Brush little butter on the inside of the buns and stuff with he prepared veggies. Garnish with grated cheese, coriander, dried herbs and dash of ketchup. Put them in an oven tray and bake for 5 mins till crisp.

* Step 6

Without wasting time, let's finish our soup prep till buns get ready. Open the pressure cooker once it cools and seive the dal till you get the soup texture.

In a pan, add olive oil, chopped garlic till you get the aroma. Add the dal soup mixture to this with salt to taste. Mix well till a boil.

In a soup bowl add small chunks of paneer, lemon juice and pour the hot soup. Sprinkle black pepper, dried basil and fresh coriander.

Check the buns and serve hot. HAPPY LUNCHEON !

Notes: Wash the mushrooms in hot water and micro in water for 40 secs. Seive it. If you wish to substitute the buns, you may stuff this vegetable filling in cooked chappati roll, grease with butter and bake till little crisp
