Super easy and delicious..a traditional recipe named differently in different parts of india. Some might call it bharta, while some call chokha..they all are so appetizing.
This is my grandmother's recipe . When we used to visit our daadi at our native place in our summer holidays, she used to prepare this bharta in a different way. She used to just roast and sprinkle some spices and serve with bhaakris. But I have recreated her recipe by giving a little tadka as my kids like it this way.

Cooking instructions
* Step 1
Start by roasting the Brinjal. Make some slits and apply a few drops of oil on the surface of the Brinjal.
This will help to roast the Brinjal from inside.
Keep rotating the sides while roasting. You know it is well done when the surface of the Brinjal becomes soft and the skin is wrinkled.
* Step 2
Once the Brinjal is cooled a bit, remove the skin and cut then in to pieces or smash it with a fork.
* Step 3
For the tadka, heat oil. Add the onions salt turmeric and saute.
Add the roasted Brinjal, peanut powder red chilli powder and some coriander leaves.
* Step 4
Mix it up and our baigan ka bharta is ready.
