Gharge (pumpkin Puri)

This is a traditional recipe from konkan region of Maharashtra. These puris are healthy and sweet as they are made with pumpkin ,whole wheat flour and jaggery. Also these puris are perfect for breakfast or snack.

Ingredient

Food ration :

4-6 people

Cooking time :

1 hour
1 tsp

ghee

1 cup

jaggery

Pinch

salt

as required

Oil for frying

Cooking instructions

* Step 1

Peel the skin, take out the seeds and grate the pumpkin. You can wash and dry the seeds and eat as snacking.

* Step 2

Heat a pan and heat ghee. Add the grated pumpkin and saute. Add jaggery and mix till gets dry and changes its color to dark yellow.

Let it cool for 10-15 mins.

Once cooled, add the wheat flour and salt and knead into a tight dough.

You may need some more flour depending on the moisture of pumpkin mixture.

* Step 6

Take small piece of dough and roll a thick puri. Repeat the same with remaining dough. Alternatively, you can roll a big chapati and cut out Puris out if it using a cookie cutter or bowl.

Fry the puris yellow color.

Enjoy with tea or just as it is.
